Piping Techniques
In this four-hour class, students will learn all the technical aspects of cake decorating techniques such as correct use of pastry bags, different ways to create star borders, shell borders, rosette borders, zigzag borders, inverse borders, and braided borders.
Spatula Techniques
In this four-hour class, students learn different spatula techniques to apply icing to their cakes. You’ll also learn how to create designs using a pastry bag. Students will also learn about the tools and techniques for leveling, using a serrated knife, cake levelers, fillings, and crumb coat.
Leveling, Filling, Crumb Coat and Icing Technique
In this four-hour workshop, the students will learn all about, using the right tools and techniques for leveling using a serrated knife, cake levelers. Filling, crumb coat, and the correct use of spatulas to achieve an even and smooth finish. Students will work on a real cake to take home.
Chocolate and Vanilla Workshop
In this four-hour demonstration class, you’ll learn all the technical aspects of baking, the correct way to temperature ingredients, how to measure dry and liquid ingredients. Students will also learn how to elaborate a very moist vanilla cake, cupcakes, blackout chocolate cake, carrot cake, red velvet cake, and a delicious American vanilla buttercream icing, chocolate buttercream, and cream cheese frosting.
Intro to Fondant
In this four-hour workshop, you’ll learn all the technical secrets to roll out fondant and to cover a dummy cake using this sugar paste. The students will also learn how to use gum paste and fondant to create different designs; draping, borders, laces, quilting techniques, stencils designs.
Gum Paste Workshop
In this eight-hour workshop, the students will learn how to create a very quick and simple gum paste mixture to create rose, rosebud, calla lily, and foliages. You’ll also learn how to add color to the paste and how to roll out, cutting and shaping technique. In this workshop, the students will also learn how to use color dust to paint all the flowers. This is a two-day course
Tier Cake Workshop
In this four-hour workshop, students will learn how to build beautiful cakes for Weddings, Sweet Sixteen's or Anniversaries. We'll learn the correct way to create tiers, using dowels and columns for classic and modern designs. Students will create designs using royal icing, gum paste, and fondant. We will also learn how to create flower arrangements for decorating cakes.
