What you'll learn in this knife skills class:

Chef Paul will teach you the fundamentals of basic knife cuts that make cooking at home easy and fast. He’ll explain how to choose the best knives, and how to take care of the ones you already have.  You’ll become familiar with everything from chopping and slicing vegetables to mincing herbs with a professional technique. Get firsthand experience by using what you’ve learned to prepare a delicious meal!

There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.

We had the perfect day! I have taken many cooking classes in NYC and this has been the best. We learned a lot and ate a lot. The atmosphere was fun, light hearted but well paced and informative. I am a cook and my boyfriend isn’t but it was a great place for both of us to learn. Thank you! We will return!

I thought the course was fine but a bit misleading in its title. I have a solid understanding of basic knife skills and was excited for a "master class". I was expecting a course showing some advanced knife techniques and ways to improve speed. Instead it was very basic, useful for people with little understanding of how to use a knife in the kitchen but not of a lot of help to me. The atmosphere was fun and the food was very good, but ultimately I learned very little.

What a totally delightful evening. I am a pretty competent cook, and I learned quite a bit and yet had a completely relaxed and enjoyable evening. Go! Have fun! Learn something you can put to work tomorrow!

Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!
