Emily Acosta & Alessandra Ziviani

Teaches at La Scuola at Eataly Flatiron

Emily Acosta graduated from NYU's Stern School of Business in 2007, and achieved her Master's Degree in Food Studies from NYU in 2013. Most of her academic research focused on the intersection between food, the arts, and technology. After a brief stint in finance, her passion for food led her to a variety of food jobs, from practicing affinage in underground cheese caves, to working in a chocolate factory, to her current role as Cheesemonger at Eataly New York. Emily was the first woman and first New Yorker to win the prestigious Cheesemonger Invitational competition in 2014 against almost 50 competitors from around North America, and was named one of Zagat's 30 Under 30 in 2015. She also proudly serves as producer of the cheese-themed Cutting the Curd podcast, which broadcasts weekly on the Heritage Radio Network.

Alessandra Ziviani is originally from sunny California but is no stranger to the Italian lifestyle. Her father, an Italiano Vero, was born in Verona, Italy. Her family spent many summers visiting his sister and seven brothers until they eventually moved to the small town of Fumane near the famous Lago di Garda. Perhaps it was here, in the heart of the Valpolicella and Amarone vinyards, that Alessandra first fell in love with wine. Memories of playing hide and seek through thick, gnarled grapevines and quiet afternoon naps under shaded light green leaves has made Alessandra's passion for viticulture an ever-growing obsession. Alessandra loves talking and teaching about wine and is beyond grateful that she is given ample opportunity for that here at Eataly! She dreams of one day owning her own vineyard and self-sustainable farm, and is working to complete her winemaking certificate thought the UC Davis viticulture program. Alessandra is currently Manzo Ristorante's beverage director - so come by to chat wine!

    Class was good but there was too much cheese for the amount of wine (6 cheeses and 3 wines) provided. I would suggest one wine per cheese or more refills on wine. Thank you.

    This class is led by a cheese expert and wine expert who discuss the selections and why they pair well together. It also teaches you a bit about the Southern Italy region as it relates to wine and cheese production. The classes focuses a bit more on tasting than education. You also get a 10% discount on same day purchases at Eataly and their wine shop next door. Overall, a fun way to spend an hour and a half in the evening. I discovered a few cheeses and wines that I would purchase again.
