Better then expected

This was my first ICE course. As an experience, it was alot of fun. As a cooking class, I was hoping to learn more and felt the way it was structured was a bit chaotic. There were just a few demos from the chef, and we were basically set loose to rush around the kitchen to cook 6 different recipes in 2.5 hours. The recipe instructions could have been more detailed, and it felt like they were being workshopped - one had a recommendation for a Worchester dipping sauce (for dumplings) that the chef instructor acknowledged was a mistake, and another recipe called for a steaming cooking method that the chef said we could skip in lieu of pan frying. Meatballs had to be steamed much longer than the recipe called for.
I'd suggest for future classes a more organized approach - give attendees a brief overview of where to find everything in the kitchen. Make sure all the ingredients are adequately prepped (the wanton wrappers were not fully thawed for example and that made folding the dumplings more challenging). Use recipes that have been thoroughly reviewed/tested.
The fun parts were working together - we all had to partner up with two neighbors to cook all 6 recipes in that time - and eating the delicious food together at the end. It was a fun date night for my husband and I.

There wasn’t a lot of teaching involved. The written instructions contradicted what the instructor was telling us. We did have fun but not sure it was worth the cost.

The Chef was wonderful -- informative, organized, knowledgable, calm. He was warm and pleasant.
Just before the class was to begin he was notified that the class would go from 11 to 13. He was flexible and did all he could to accommodate the increase in class size causing the ingredients to be in short supply.
As for the menu, it was diverse -- I personally did not care for the sauteed greens. The steak was excellent and the instructions were remarkably detailed and educational. The tiramisu was fabulous.

The teacher was great! The recipes were very average in taste and flavors. The kitchen staff was extremely noisy when disposing the plates and pots as well as cleaning.

What an amazing experience we had in our French Steakhouse course. Chef Pablo was the best, so informative, Professional and fun! The assistants, Jafra and Andre were very helpful and answered all our questions as well. I look forward to returning for a class with my sister next year! Thanks Chef Pablo and team!!

It was a lot of fun, and I came away with the best recipes for chocolate peanut butter ganache and peanut butter frosting! Can’t wait to make chocolate peanut butter cupcakes at home with these recipes!

4 cookies is too much for a 4 hour class. It felt rushed and stressful instead of relaxed and fun. I also didn't think the cookies came out very good (undercooked), which we had no control over.

Waste of money. The class was advertised as intermediate, but we were just taught chopping skills. Out of the elaborate menu listed, I was only able to actually cook one dish and the rest of the dishes were divided between the group. I was excited to obtain new skills to further my passion for cooking, but instead I was extremely disappointed.

This was my wife and I's first class at ICE and we thought it was great. The chefs were very knowledgable and had great personalities, making the class a lot of fun. We met some nice people as well. The food was delicious and having some leftovers for lunch the next day was a bonus.

The ingredients were excellent. The food delicious. The classroom chaotic and disorganized. It would be great if each station were pre-prepped with their own set of cookware, utensils and ingredients. This would prevent a lot of searching time as well as other participants swiping from each other (whether due to ignorance or laziness - or they ruined their allotted amount). We have taken a few classes at ICE and find that the chef and assistant are always pulled in too many directions. Especially when the assistant constantly has to leave and get more ingredients leaving the chef to help 16 people by himself. I feel that my partners and I did not get the same value as the other participants even though we paid the same money. Less attention, less instruction and fewer ingredients. Chef was very knowledgeable and enthusiastic but answered some questions in a terse manner. i.e. When asking “How do we know it is done?” He merely said, “Look at it.” We asked, “What are we supposed to be looking for?” He didn’t give examples or explain. I love cooking and learning, but last night was a mix of fun and frustration. Thank you for taking the time to read my survey.

I enjoyed learning to cook the Puerto Rican dishes very much and also partaking in the dinner afterwards! Everything was delicious. Chef Ingrid and her assistants were very attentive and I learned a lot. I left feeling very inspired and full, lol. Highly recommend this course!

I really enjoyed this class, the instructor was very knowledgeable and made sure the class was fun at the same time. I learned so much about baking with chocolate that I will take home to my kitchen, highly recommend!

I feel like I didn’t learn what was in the course description. I went to learn basic cooking techniques and we spent most of the time just preparing a recipe. Very disappointed

I was a little disappointed in the class, I felt very rushed and we actually made only two cookies.
We took the sourdough dough home to bake! We didn't get to make the black and white cookies because there was no time left, although the chef asked if we wanted to mix the ingredients and bake them, by then it was two thirty and I had a Uber car waiting for us, so we could not stay any longer.
I going to the Holiday Cookie bake in November with my daughter I hope this one is better.

Teacher was new to the course (filling in for another one, it seems) so didn't know the recipes and wasn't great at explaining what we were doing. She was quite nice, but would have benefited from some studying beforehand of the recipes and practice of the procedures.

Much more guidance, useful tips, info about the ingredients, etc would have been great. The dishes came out great but the instructor really didn’t do much at all. This diminished the learning aspect of the course as we were essentially cooking on our own in a team format.
More guidance on team management would have been helpful. Dominant personalities have a huge impact.

This was my second class at the Institute of Culinary Education. I love the cooking classes at ICE. The instructors are very knowledgeable and we get to cook in a professional kitchen. The Essentials of Thai Cooking was a lot of fun and we ate our delicious culinary creations at the end of the class. I enjoyed it so much that I'm signing up for the Essentials of Thai Cooking II.

Really fun class. Chef was super awesome. Chef went into background of spirits and how mixing them brings out the best (or worst) in taste. We made lots of cocktails and mixed drinks and best of all we got to drink all we made. Really fun night.

Overall the class and the chef were great. I was surprised to find out during the class that not everyone was able to do all the planned dishes.

So amazing!! You could tell that the instructor is passionate about what he does and is extremely knowledgeable. This class also drew a fun crowd of people ranging from beginner home cooks to couples looking to host their first party together. I thought it was so much fun!! You won’t regret it.

Excellet class, where the instructor allowed each team to cook the entire menu. If you are good at moving fast, go for this class. 4 hours will fly by, and you'll be completely satisfied with your food at the end.

The class was OK, but we should have been told ahead of time our group would only cook two of eight dishes and it wasn’t going to be our choice. We came to learn to make pasta and didn’t have that opportunity. It felt like we were cooking dinner for other people for $125 each.

The class experience was great. The instructor gracefully engaged the students with humor and direction and also managed 8 meals over a 3.5 hour period. Give yourself at least 20 minutes to find the location of ICE after commuting though!

The instructor, Frank, was great. Very friendly and helpful. We enjoyed ourselves and learning how to make a few Indian dishes. I guess my main issue would be that I think it’s very important to eat organic and none of the ingredients were. If you’re paying $250 to take a cooking class I don’t think it’s unreasonable to expect quality ingredients no matter how skilled or unskilled the participants are.

Very nice instructor, positive energy in the class and nobody caused problems with food preparation or outcome. My only strike is the wine they served was very cheap / subpar, despite the word "wine" being in the name!

The instructors for this course were great! Gerry and Jack had great chemistry between them and were very helpful. The recipes were delicious, but perhaps a few too many? There was almost too many to try them all. My only complaint would be that we were all starving by the time we sat down to eat at 9:30pm.

Very nice class but it was 16 people which made the kitchen cramped and caused supplies and asking questions to the chef difficult to navigate due to that...

This was a well taught course. I understand more about Thai cooking. I still prefer other types of cuisines, but the instructor put time and effort to help us learn and refine our cooking techniques.

The class was enjoyable, led by fun, knowledgeable instructors. Though I was generally happy with the results, I couldn't help feeling that we could have done more in the 2.5 hours. Maybe a little less talking by the instructors and a little more "knife time" would allow more content or at least more practice time with instructor guidance, since knife skills is all about practice.

Chef Wai and Regis were so nice and taught the class very well. I never tried to make my own sushi or dumplings, but after taking this class, I can see with a bit of preparation, it's actually quite easy! Thanks Chef Wai and Regis!!

Great class. Fun process made easy. But, the recipes we made were all so different. It would be better to ensure they had more similar levels of difficulty and time to prepare.

My fiance and I had a ton of fun at this class. The drinks were delicious and it was great learning to make gyoza, shumai, and the sushi! We even went home and made the gyoza again only 2 days later.

The class was excellent, but could have been even better. Chef was amazing -- enthusiastic, knowledgeable, personable. The assistants were pleasant, but not sufficiently engaged. The room was too small for 12 students and 3 instructors. The food was absolutely delicious.

Excellent course for beginners or more experienced cooks. Choice of menu outstanding and clear, easy to follow instructions. All the dishes were hands on cooking so one could ask questions and be able to do the dishes oneself later. Handout booklet also very useful to follow through with. Very good instructor/chef who really made the course well worth while attending, his assistants also good and helpful. Highly recommended

Fantastic! I would have preferred to be responsible for my dish A-Z instead of in a team setting as there were different levels of experience – but Chef Nick kept everyone pointed in the right direction and it allowed us to cover a large menu.

The chef and sois chef were such kind and knowledgeable people. However, not everyone was able to cook everything. You were really assigned only one dish. We were given all the recipes but not able to execute them. I would cut the recipes to provide more teachable moments and gain more experience.

The class in itself was nice. The instructor was lively, thorough and professional. My partner and I were certainly one of the only attendees who cooked regularly but we did learn some new techniques and recipes. The reason why I did not give the class a 5 Star review and decided to go with a 3 is because i feel a little mislead. Upon purchasing this class it listed all the dishes and cocktail we would be making. Most of the class was as promised but they left out two things.... a Ribbolata dish and A lemonchello cocktail ( don't think i spelled them correctly :?) Seems a little sneaky,no?

Was not what I expected - the class was split into three groups and each group did a couple of the recipes. The group I was in was assigned items that, unfortunately, I already knew how to make. I signed up for the class to learn to make a specific set of items on the list - and was not exposed to any information on those at all. The class was not "instructional" - each group used the recipes to create the dishes and had access to the Chef/Instructor if we had questions. It was like a fun night out for dinner - where we had to prep our own food.

Only made one pie. Not as much structure as i would've liked. You were kind of onyour own . Could've made it in my own kitchen . They had no apple pie as a choice as specified. I wanted to learn a double crusted pie but the instructor really didn't have time to teach it . Could've been better

I enjoyed the class however when I contacted Course Horse to help me retrieve the recipe they hand out to all that purchased the deal they said the instructor lost "my attendance" and wants me to prove that I was there. I sent them the name of the instructor and I even had proof to show of my purchase. No body responded after. Very disappointed, I have never had a problem with the cooking classes I've taken in the past with Course Horse.

This was my first cooking class. Scotty was entertaining and informative. Some basic safety in a commercial kitchen was taught. The kitchen was a little chaotic but we managed to make a number of very good Chinese dishes. Not bad for a bunch of beginners!

Class was fun and though I did learn some, it was more introductory than described. I was expecting to learn to de-bone/fillet which we did not try or even discuss, but class was nonetheless very enjoyable and a great environment. Would take a class here again, but only if a higher skill level offered.

We had a great time in the class, but we were a bit bummed we only got to focus on one dish with such a large class. Because our class was big, we spent more than an hour prepping ingredients alone to feed everyone. Instructors were great, but definitely busy fielding everyone's questions. I would suggest smaller class size and a reduced menu so everyone can give it a try.
