Directions:
There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.

Description

Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

    My friend and I tried our first class at Miette, a level 1 knife skills class, and had no idea about all of the things we didn't know! Not only did we learn fundamental knife cuts, but also mind-blowing knife maintenance and care. The 12-person class size allowed us all to get engaged doing the cutting and we each received personalized attention from Chef Paul before capping it off with a delicious meal cooked using the fruits of our labor.

    This class was very through and detailed from knife care, appropriate length size, and technique. Chef Paul was very kind and professional. He answered many of our questions pertaining to knife skills and cooking process. The pacing was great and the class size was perfect (8). Chef Paul also discussed the quality of ingredients and cooking style playing a crucial part in learning to cook. I look forward to attending another of his classes very soon!

    Fantastic night! Food was phenomenal. Learned a ton - cooking techniques, types of ingredients to use (olive oil, salt, pepper, fish, etc), pans and utencils. Paul, the head chef, was a wonderful host and instructor, full of interesting stories and explanations. We really enjoyed the whole experience and definitely plan to do it again.
